Aguadito De Pollo

Dishes & Recipes

Aguadito de pollo is a Peruvian chicken soup known for its vibrant green color and herbal flavor, made by simmering chicken in broth with aromatics, then stirring in a blended green sauce of cilantro, spinach, peas, and often huacatay (a pungent Peruvian herb sometimes called "black mint"). Its name, roughly "little watery one," refers to its thin, broth-based consistency.

The dish is often described as an offshoot of caldo de gallina (chicken broth), with green ingredients added to create its distinctive color and flavor. It's typically served with white rice, boiled potatoes, or crusty bread to soak up the broth, and is considered a comforting, restorative meal in Peru, especially in cold weather or when recovering from illness.
