Baby Peppers

Ingredients

Baby peppers, or mini peppers, are small, immature bell or sweet peppers picked before they reach full size, coming in red, yellow, orange, and green. They have thinner walls, fewer seeds, and a milder taste than full-size bell peppers, making them good for eating raw, roasting, grilling, or stuffing with cheese or breadcrumbs. They're common on veggie trays and as a garnish, and in Mediterranean and Middle Eastern cooking they're often charred whole and served as part of a mezze spread. Choose firm, glossy, unblemished peppers; they keep about a week refrigerated.
