Baby red potatoes are small, round, red-skinned potatoes harvested before full maturity, giving a thin, smooth skin and a creamy, slightly sweet flesh. They are not the same as fingerling potatoes, which are a distinct, naturally elongated variety; baby reds are simply a young-harvest stage of a standard red potato. They roast, grill, or boil well whole, developing a crisp skin when roasted while staying tender inside, and they're a common base for potato salads. Their thin skin holds more nutrients than a thicker-skinned mature potato and doesn't need peeling.
