Canary Melon

Ingredients

A canary melon is a smooth-skinned, oblong melon (Cucumis melo, Inodorus group) with a bright yellow rind and pale green-to-white flesh, valued for its mildly sweet, slightly tart flavor with a hint of citrus. It is sometimes confused with the piel de sapo (or "Santa Claus") melon, a related but distinct variety with rough, mottled green skin rather than canary's smooth yellow rind. Canary melons are grown widely in Spain, Central America, and the United States, and are eaten fresh in fruit salads and cold soups like gazpacho, or paired with prosciutto, feta, and fresh mint. Its pale, juicy flesh also balances richer, creamier ingredients such as dairy and nuts, similar to how honeydew is used.
