Candied peel, also called candied citrus peel, is the rind of citrus fruits such as orange, lemon, lime, or grapefruit that has been boiled in sugar syrup to remove bitterness and preserve it, leaving a sweet, chewy strip. The technique dates back to antiquity as a way to preserve citrus, and became especially prominent in Middle Eastern confections. It's a common ingredient in fruitcakes and Christmas cakes, baked into cookies, scones, and muffins, and occasionally used in savory curries, stews, and marinades. Orange peel gives a milder, more balanced flavor, while lemon and grapefruit peel are more assertively tart; candied peel pairs well with chocolate, nuts, and spices like cinnamon and nutmeg.
