Caprino Romano is a hard, salty Italian grating cheese made from goat's milk, made in the same aged, pressed style as pecorino romano but using goat's milk instead of sheep's milk. Unlike Pecorino Romano, which is a protected (DOP) product tied specifically to Lazio, Sardinia, and Grosseto, "Caprino Romano" is a more general Romano-style name applied to aged goat cheeses, including some made outside Italy.
After the milk is curdled, the curds are pressed into molds and aged for several months to a year, developing a hard, compact texture, a pale interior, and a sharp, tangy flavor with a goaty finish.
Like other hard grating cheeses, it is commonly grated or shaved over pasta, salads, and soups, or served on a charcuterie board.
