Charoli, also called chironji or chiraunji, is the small, cream-colored seed kernel of the Buchanania lanzan tree, native to India and parts of Southeast Asia. It has a mild, sweet, almond-like flavor and a buttery texture, and is used mainly in North Indian sweets such as barfi, kheer, and halwa, either ground into the filling or scattered on top as a garnish. It is sometimes substituted for almonds or pistachios in desserts when a subtler, less assertive nutty note is wanted.
