A cocktail sausage is a small, bite-sized sausage, rarely more than two inches long, served as an appetizer or party food. In the US these are often labeled "little smokies" and are pre-smoked, commonly simmered in barbecue sauce or wrapped in bacon; in the UK, cocktail sausages are usually small versions of a standard pork breakfast sausage, baked rather than smoked, and served plain or as "pigs in blankets." They're made from pork, beef, or a blend, and are typically served on toothpicks with mustard, pickles, or other dipping sauces.
