Corn salad, also called mache or lamb's lettuce, is a small, tender leafy green (Valerianella locusta) used raw in salads. Despite the name, it has no relation to corn (maize); 'corn' here uses the older English sense of grain fields, since the plant grows wild among grain crops in Europe. It is native to the Mediterranean and cultivated widely in France, Italy, and Germany as a cool-season, frost-tolerant winter crop. Its flavor is delicate and mildly nutty, and it is typically dressed simply with vinaigrette or paired with citrus, nuts, soft cheese, or cured meats.
