A crepe is a very thin French pancake made from a runny batter of flour, eggs, and milk, cooked quickly on a hot, flat surface. It's believed to have originated in Brittany, France.
Savory crepes ("crêpes salées") are filled with meat, cheese, or vegetables; sweet crepes ("crêpes sucrées") are filled or topped with fruit, chocolate, or whipped cream.
Crepes have counterparts in other cuisines that share the thin-pancake form but differ in batter and use: dosa in India (fermented rice-and-lentil batter), blini in Russia (yeasted, usually smaller and thicker), and injera in Ethiopia (fermented teff batter, used as both food and utensil).
