Cynar is an Italian bittersweet liqueur (amaro) flavored primarily with artichoke leaf along with a blend of other herbs and botanicals. It was created in 1952 by Angelo Dalle Molle at the G.B. Pezziol distillery in Padua; Campari acquired the brand in 1995 and has produced it since. Cynar is drunk as an aperitif, often with soda water or ice, used in cocktails such as Negroni variations, and occasionally in savory sauces or braises. Its flavor is earthy and bitter with herbal and citrus undertones, and it pairs well with orange, grapefruit, vermouth, and other amari.
