Fattoush is a Levantine bread salad of toasted or fried pita tossed with tomatoes, cucumbers, radishes, and herbs (usually parsley and mint) in a lemon and olive oil dressing, often finished with sumac or pomegranate molasses for tartness. The name shares its Arabic root with fatteh, "to crumble," but the two dishes differ: fattoush is a cold, dressed salad, while fatteh is a warm, layered dish with yogurt sauce.

Traditionally a way to use up stale pita and leftover vegetables, fattoush is now a staple across Lebanese, Syrian, Palestinian, and Jordanian tables, usually served as a side dish or part of a meze spread. Regional versions add lettuce, green onions, or fried eggplant, and vary the ratio of bread to vegetables.
