Garlic Oil

Garlic oil is a neutral oil, such as olive, vegetable, or grapeseed oil, infused with the flavor of garlic cloves by gently simmering or steeping them in the oil until aromatic. It is used for sautéing and roasting, in dressings, marinades, and dips, and as the base of dishes such as aglio e olio and many stir-fry and noodle sauces. Homemade garlic oil should be refrigerated and used within a few days, since garlic held in oil at room temperature can support the bacteria that cause botulism; commercial garlic oils include acidifiers or preservatives to make them shelf-stable. Its flavor pairs well with herbs such as rosemary and thyme, chili, and acidic ingredients like lemon and vinegar.
