Garlic Vinaigrette
Garlic vinaigrette is a salad dressing and marinade made by whisking or blending minced or pressed fresh garlic with vinegar and oil - commonly white wine vinegar or champagne vinegar with olive oil - until it comes together into a temporary emulsion. Dijon mustard is a common addition because it helps the emulsion hold and adds a little heat; shallots and fresh herbs such as parsley or thyme are also common. It is used to dress green salads and roasted or steamed vegetables, and as a marinade for meats, poultry, or fish. Unlike a mayonnaise-based aioli, a vinaigrette's emulsion is temporary and separates on standing, so it is usually whisked again just before serving.
