Genever, also called jenever or Dutch gin, is a juniper- and grain-based spirit from the Netherlands and Belgium with a history reaching back several centuries. It is distilled from a mash of malted barley, rye, and corn, then flavored with juniper berries, anise, and other botanicals. Unlike London dry gin, genever has a fuller, more cereal-forward, malty character and less pronounced juniper, giving it a rounder mouthfeel. It is drunk on its own or in traditional Dutch and Belgian cocktails, and it can also be used in marinades, sauces, and braises, where its malt and botanical notes add depth to hearty dishes, roasted meats, and aged cheeses.
