Granulated sugar is crystalline sugar commonly sold as white table sugar. It sweetens food and contributes to structure, browning, and moisture behavior in baking. Its crystals are larger than caster sugar and much larger than powdered sugar particles, so the forms do not behave identically in every recipe.
