Linzer Cookies

Linzer cookies are a traditional Austrian pastry named for the city of Linz. Their exact origin is disputed: the earliest known Linzer recipe dates to the 17th century, though the cookie's association with Linz was cemented when a local confectioner began producing it commercially in the early 19th century. Unlike the single large Linzer tart, which is baked and sliced as one dessert, linzer cookies are individual sandwich cookies assembled from two smaller baked rounds.

Linzer cookies are made with a buttery, nutty dough that is typically flavored with ground almonds or hazelnuts. The dough is rolled out and cut into round shapes, with a smaller round shape cut out of the center of half the cookies to create a "window" effect. The cookies are then baked and filled with a thick, tart fruit preserve, such as raspberry, blackberry, or apricot. The top cookies with the cutout centers are placed over the filled bottom cookies, creating a sandwich-like appearance.

The distinctive lattice-like top of the Linzer cookie is not only visually appealing but also serves a practical purpose. The cutout allows the fruit filling to peek through, adding to the cookie's visual appeal, and also allows steam to escape during baking, preventing the filling from bubbling over.

Linzer cookies are considered a delicate and elegant pastry, often associated with the holiday season and special occasions in Austria and other parts of Europe. They are a popular item in Viennese cafes and bakeries, where they are traditionally served with a dusting of powdered sugar on top.

In addition to the classic round shape, Linzer cookies can also be found in various other shapes, such as hearts, stars, or crescents. Some variations may also include the addition of spices like cinnamon or cloves to the dough, or the use of different types of fruit preserves, such as lingonberry or cherry.

Linzer cookies are not only delicious but also have a rich cultural history. They are considered a symbol of Austrian pastry-making traditions and are often given as gifts during the holiday season. The combination of the buttery, nutty dough and the tart fruit filling makes Linzer cookies a beloved treat that is enjoyed by people around the world.
