Noyaux

Ingredients

Noyaux is the French plural of noyau, meaning a fruit stone or pit. In culinary use, it can refer to the kernels inside stone-fruit pits, particularly apricots, associated with an almond-like flavor and preparations such as crème de noyaux.

Safety

Stone-fruit kernels can contain amygdalin, which can release cyanide when eaten. They should not be treated as ordinary edible nuts. A recommendation to use “small quantities” does not establish a safe amount, and this entry is not a guide to preparing raw kernels for consumption.

See the FDA warning about amygdalin in apricot seeds.
