Orange extract is a concentrated flavoring made by extracting the essential oils from orange peel into an alcohol base, for use where fresh zest or juice would be impractical or too mild. It is used in small amounts, since it is far more potent than fresh zest, to flavor cakes, cookies, pies, and other baked goods, as well as marinades, glazes, and whipped cream or custard. Some blends combine orange with other citrus oils, such as lemon or lime, for a more layered flavor. Because it can turn bitter if overused, most recipes call for it a few drops at a time.
