Pepperkaker, sometimes anglicized as "pepper cakes," are Norway's version of the thin, crisp Scandinavian Christmas spice cookie, close kin to Swedish pepparkakor and Danish pebernødder. Despite the "pepper" in the name, the dominant spices are ginger, cinnamon, cloves, and cardamom, with black pepper playing only a minor role. The dough, made from butter, sugar, egg, and flour worked in with the spices, is chilled, rolled thin, cut into shapes like hearts, stars, and trees, and baked until crisp and golden. In Norway they're a hallmark of Christmas baking, often strung as tree ornaments or shared with family, and are traditionally paired with coffee or mulled wine.
