Pickling Spice

Pickling spice is a pre-mixed blend of whole or cracked spices, typically including mustard seed, coriander seed, allspice, bay leaf, black peppercorns, cinnamon, clove, and dried chile, added to a vinegar brine to flavor the finished pickle. It is stirred into the brine rather than the food itself, and is most closely associated with North American and British pickling traditions - deli-style dill pickles, pickled beets, and corned beef brines all commonly call for it. The exact mix varies by brand and recipe, but cinnamon and mustard seed usually dominate. Outside pickling, the same blend can season braises, stews, or roasted vegetables when a warm, slightly sweet-savory spice note is wanted.
