Pie spice, more precisely pumpkin pie spice, is a ground spice blend - usually cinnamon, ginger, nutmeg, allspice, and clove, with cinnamon dominant - sold pre-mixed for seasoning pumpkin and other fall pies. Pumpkin pie itself dates to colonial America, but the packaged spice blend is a later convenience product that saves bakers from measuring five spices separately; it can always be recreated by combining the individual spices in roughly the same ratio. Beyond pie filling, it is used to season sweet potatoes, roasted root vegetables, oatmeal, quick breads, and muffins, and some cooks add a pinch to savory stews or curries for warmth. It is strongly associated with Thanksgiving and Christmas baking in North America.
