Sirloin tip, also called round tip or knuckle, is a lean cut of beef taken from the top of the round primal, near the hip. Despite its name, it is not part of the sirloin proper; the two are commonly confused, and sirloin tip is the tougher, less marbled cut of the pair. It benefits from marinating and moist-heat cooking such as braising or stewing, or slow roasting, though thin slices cut against the grain can be grilled or seared. It is also a common component of ground beef blends, contributing to burgers and meatballs. Sirloin tip pairs well with garlic, onions, mushrooms, red wine, and robust herbs like rosemary and thyme.
