Sweet Potato Mash

Techniques

Sweet potato mash is cooked sweet potato that has been boiled, steamed, or roasted until soft, then mashed or puréed, often with butter, milk or cream, brown sugar, cinnamon, nutmeg, and salt. It can be left chunky or whipped smooth, and is served as a side dish or used as an ingredient in other recipes, such as pie or gnocchi. Sweet potato mash is a common Southern American side, especially at Thanksgiving, but regional versions vary: Caribbean cooks may add coconut milk and allspice, Japanese preparations may use miso, soy sauce, and mirin, and Indian versions often add cumin, coriander, and chili.
