- 60 grams Caster Sugar
- 80 grams Almonds - ground
- 200 grams Butter - unsalted
- 2 large Eggs - 1 egg plus 1 yolk
- 2 small eating apples - crispy variety
- Zest of one orange
- Juice of half a Lemon
- 2 tablespoons honey - a clear one
- 1 ball glacé ginger
