Ingredients

• 5 ½ cups granulated sugar
• 1 tsp yeast nutrient
• 2 oranges, juice and rinds
• 2 lemons, juice and rinds
• 8 oz peeled ginger, thin-sliced and soaked in honey
• 3 pods of cardamom seeds
• 2 limes, thin-sliced
• 1 cup of raisins
• 1 tsp mace
• 1 stick of crushed cinnamon
• 1 tsp crushed cloves
• 1 nut of nutmeg, crushed
• 2 Campden tablets
• 1 package champagne wine yeast
• Water (amount as needed)
