• 1 teaspoon dried mint
• 1 teaspoon Mexican chilli powder
• 3 garlic cloves, thinly sliced
• 2 tablespoons white rum
• 1/4 cup extra virgin olive oil
• 1 kilogram beef rump steak (in one piece)
• 3 tomatoes, seeded and finely chopped
• 1/2 small red onion, finely chopped
• 1 green chilli, long seeded and finely chopped
• 1 teaspoon finely grated lime rind
• 1 tablespoon lime juice
• 4 zucchini, peeled into ribbons
• 3 corn cobs, husks and silk removed
• 2 tablespoons fresh mint leaves, fresh and roughly chopped
• Small tortillas, chargrilled, to serve
• Lime wedges, to serve
• Fresh mint sprigs, to serve
