• 3 medium sweet potatoes
• 1 tbsp olive oil
• 1 tbsp salt
• 1 pound ground beef
• 1 small diced red onion
• 1 package taco seaosning
• 1 can black beans
• 1 cup fire roasted corn
• 1/4 cup sliced green onions
• 1/2 cup diced cilantro
• 1 cup grass fed cheddar cheese
• hot sauce, salsa for serving
