• 1 medium onion, chopped
• 1/2 cup chopped celery
• 1 large green bell pepper, chopped

• 1 pound andouille sausage, half of it diced, and half cut in ¼-inch slices
• 2 cloves garlic, minced
• 1 (1-pound) bag Camellia Brand Red Kidney Beans
• Water
• Salt, pepper and red pepper to taste
• 1 (8-oz.) package sweet cornbread mix
• 2/3 cup plus 2 tablespoons all-purpose flour
• 1 1/2 cups long grain white rice
• 1 teaspoon chopped parsley
