• 4 tbsp olive oil
• 1 red onion finely diced
• 1 stick celery finely diced
• 1 red pepper, seeds removed, finely diced
• 400g finely chopped tinned tomatoes
• 1 tbsp tomato puree
• Sea salt & chilli flakes to taste
• Freshly grated Parmesan
• Fresh basil roughly cut to serve
• 300g Rigatoni or pasta of your choice
