- 2 egg yolks

- 4 tablespoons vegetable oil
- 1 teaspoon vanilla extract, (optional)
- 4 egg whites
- 2 tablespoons sugar
- Maple syrup (for serving)
- Sliced peaches (for serving)
- Fresh mint leaves (garnish)
