Ingredients: 1 cup margarine (room temperature, or butter); 1 cup granulated sugar (white); 1/2 cup light brown sugar, packed; 1/2 cup dark brown sugar, packed; 1 large egg (or extra large); 3 tablespoons smooth peanut butter; 2 teaspoons vanilla extract; 1 1/2 cups all-purpose flour; 1 teaspoon baking soda; 1 1/2 teaspoons ground cinnamon; 1/2 cup ground salted mixed nuts (they should be in between coarsely ground and fine ground, click onto my photo to enlarge so you can see the ground nut size); 1 1/2 cups oats (use a heaping 1 1/2 cup quick-cooking)
