• 2 Granny Smith apples - cored, and thinly sliced
• 2 Celery ribs - thinly sliced on the diagonal
• 6 Radishes - thinly sliced
• 1/4 Red cabbage - shredded
• 3 Scallions - thinly sliced on the diagonal
• 1 Fresh cayenne pepper - thinly sliced, (optional)
• Juice of 2 lemons
• 1/4 cup 59ml Olive oil
• 1 Mint - stemmed, and roughly chopped
• Salt - to taste
• Freshly-ground black pepper - to taste
