Chebakia are traditional Moroccan cookies, shaped like roses. The cookies are fried, coated in syrup, and sprinkled with sesame seeds.
Ingredients
- pinch saffron threads ((diluted in 2 tablespoons warm water))
- 1 cup toasted sesame seeds ((divided))
- 2 cups all-purpose flour
- ¾ teaspoon cinnamon powder
- ½ teaspoon baking powder
- ½ teaspoon cardamom powder
- ¼ teaspoon salt
- ¼ teaspoon ground turmeric
- 1 medium egg
- ¼ cup unsalted butter ((melted))
- 1½ tablespoons white vinegar
- 1 tablespoon orange blossom water
- 1 teaspoon anise extract
- 1 cup white sugar
- 1 cup water
- 1 tablespoon orange blossom water ((or rose water))
- 1 teaspoon lemon juice
- ½ cup honey
- 3 cups canola or vegetable oil ((more or less depending on pot size))
