Mexican Black Bean & Sausage Enchiladas | Simple Sausage Recipe

Ingredients

• 1 Enchilada pack with 10 corn tortillas, sauce + spice mix
• 1 onion finely chopped
• 2 tbsp oil
• 1 red pepper deseeded, chopped into small bite size
• 390g can black beans rinsed
• 300g whole corn kernels rinsed
• 6 Hellers Classic Precooks cut into small bite size chunks
• 400g can Mexican style chopped tomatoes
• 1.5 cups grated cheese
• Additional to make a large batch: 1 x 10 pack corn tortillas
• 1 enchilada sauce or Mexican tomato salsa
