Orange Olive Oil Coffee Cake with Orange Glaze | Pinehurst Inn Bed & Breakfast

Ingredients

• ORANGE OLIVE OIL COFFEE CAKE
• 1 1/2 cups plain Greek yogurt (I use full fat, but low fat will work)
• 2/3 cup mild olive oil (you can substitute vegetable oil or other light oil)
• 1 1/2 cups sugar
• 3 large eggs
• 1-2 tsp orange zest, finely grated
• 2 TBLSP orange juice
• 2 tsp vanilla
• 1/8 tsp orange extract, optional
• 2 1/2 cups all purpose flour
• 2 1/2 tsp baking powder
• 3/4 tsp baking soda
• 1/2 tsp sea salt
• ORANGE GLAZE
• 2 TBLSP butter, softened
• 1 cup powdered sugar
• 2 TBLSP heavy cream
• 1 orange, zested
• 3 TBLSP orange juice
• 1/2 tsp vanilla
