  • 500ml chicken stock (approx)
  • 100g low moisture mozzarella, plus extra for stuffing
  • 50g plain flour, seasoned
  • 2 eggs, beaten
  • 100g panko
  • Salt and pepper, to taste
  • Vegetable oil, to fry
  • Pesto, to serve
