Kohlrabi and Cabbage Salad with Maple Lemon Dressing

Ingredients

• 4 medium bulbs kohlrabi (for us this could be one of our giant ones or 3-4 small ones)
• 3 cups shredded green cabbage
• 1/4 cup dried cherries
• 1/4 cup sunflower seeds
• 1/4 cup coarsely chopped fresh dill
• 1/4 cup extra virgin olive oil
• 3 tablespoons pure maple syrup
• Zest of 1 lemon
• Juice of 2 lemons
• 1 garlic clove, minced
• 1/4 teaspoon kosher salt
• 1/4 teaspoon freshly ground black pepper
