Grilled Thai Chicken and Beets with Coconut Lime Sauce - A Duck's Oven

Ingredients

• 8 bone in (skin on pieces of chicken (I used drumsticks))
• 2 tsp minced garlic
• 2 tbsp choppd cilantro
• 2 tbsp brown sugar
• 1/2 tsp ground black pepper
• 1 tsp ground coriander
• 2 tbsp fish sauce
• 2 tsp dark soy sauce
• 1 tbsp lemongrass paste (optional)
• 3 beets (peeled and diced into 1 inch cubes)
• 1 tbsp olive oil
• 1 tsp kosher salt
• 1/2 tsp black pepper
• Zest of 1 lime
• Juice of 1 lime
• 1 tsp curry powder
• 1 tsp white sugar
• 1/2 tsp salt
• 1/2 cup coconut cream (or use the cream at the top of a can of coconut milk)
