Ingredients

• 2 Chicken breast, cut in half lengthwise
• 1 head of broccoli, cut into small florets (2-3 cups)
• 1/2 red pepper, diced
• 2 cups shredded cheddar or mozzarella cheese
• 1 teaspoon garlic powder
• 1 teaspoon dried oregano
• 1 teaspoon black pepper
• 1/2 teaspoon ground cumin (optional)
• 6 tablespoons olive oil
• Salt to taste
• 4 medium tortillas
• 2 tablespoons olive oil (for brushing tortillas)
