Ingredients

• 2 lbs 85% lean ground beef
• Kosher salt
• freshly ground black pepper
• 1/4 cup Dijon mustard
• 3 tbsp soy sauce
• 1 tsp sugar
• 6 slices Swiss cheese
• 1 tbsp olive oil
• 8 oz baby bella or crimini mushrooms (chopped)
• 1 tsp dried thyme leaves (or 2 tsp fresh thyme leaves)
• 2 cloves garlic (minced)
