• 3/4 qt Salad oil
• 8 c Fresh spinach -- coarsely
• 1 tb Red wine vinegar
• 1/4 c Poppy seeds
• 1 ts Fresh tarragon -- chopped
• 1 ds Red wine vinegar
• 1/2 c Dijon mustard
• 1/2 c Honey
• 1 Lemon -- squeeze for juice
• 1 tb Boiling water
• 5 Egg yolks
• 1 c Yellow mustard
• 1 ds Salt -- to taste
