Sweet Potato & Spinach Salad – Melinda Marek

Ingredients

• 1 or 2 Sweet Potatoes, depending on quantity you’re making (diced into small cubes)
• A few good handfuls of fresh Spinach
• Chopped Nuts – almonds or walnuts go well here
• 1/2 Red Onion – sliced thin
• 2 Tablespoon lemon Juice
• 5 Tablespoon Olive Oil
• 1 1/2 Tablespoons Honey
• 1 teaspoon Mustard
• 1 teaspoon Mayonnaise (you can sub 2 teaspoons of dijon mustard here if you have it)
• 1 Garlic clove – crushed
