Simon Gault Honey Chicken - EastLife

Ingredients

• 6 Chicken Marylands
• 3 tbsp extra virgin olive oil
• 1 medium carrot, peeled and diced
• 1 large onion, diced
• 2 stalks celery, diced
• 5 cloves garlic, roughly chopped
• 1 stalk lemongrass, roughly chopped and smashed
• 8 Kaffir lime leaves
• zest from 1 lemon
• zest and juice from 1 orange
• handful of basil leaves
• 3 bay leaves
• 150 grams liquid honey
• 1 tbsp turmeric
• 1 tsp smoked paprika
• 500 ml orange juice
• 500 ml chicken stock
• 1 tsp salt
