• 3 stalks celery (sliced thin (about 1 cup))
• 4 large carrots (sliced thin (about 2 1/2 cups))
• 3 cloves garlic (minced)
• 6 tablespoons all-purpose flour
• 2 cups chicken stock
• 2 1/2 cups whole milk
• 1/2 teaspoon dried thyme
• 1/8 teaspoon ground nutmeg
• 1/2 teaspoon sea salt
• 1/4 teaspoon black pepper
• 1 cup frozen peas
• 1 cup frozen corn kernels
• 2 cups shredded cheddar cheese
