Ingredients

• 12 oz penne pasta
• 2 chicken breasts, cubed
• 2 tbsp olive oil
• 1 tbsp butter
• 1 small red onion, diced
• 2 cloves garlic, minced
• 1 cup sliced mushrooms (baby bella or cremini preferred)
• ¾ cup Madeira wine (or dry sherry)
• 1 cup heavy cream
• ½ cup Parmesan cheese, grated
• 1 tbsp cornstarch (optional, for thickening)
• Salt & pepper to taste
• Fresh parsley, chopped (for garnish)
