• ½ Red Bell Pepper, cored and cut into strips
• ½ Green Bell Pepper, cored and cut into strips
• 1 T. Unsalted Butter, room temperature, optional
• 4 Flour Tortillas
• 2 c. Monterey Jack Cheese, shredded (substitute with cheddar or a Mexican cheese blend)
