Ingredients
- vegetable oil cooking spray
- 5 graham cracker cookies for base + 2 more for crumbles on top
- 2 Tbsp. unsalted butter, melted
- 1 8-oz. package of cream cheese, at room temperature
- ¼ cup sugar
- ¾ cup ricotta cheese (6 oz.) at room temperature
- ½ cup fresh key lime juice or ¼ cup Rose's Lime Juice
- If using fresh key limes, add in zest from 2 key limes
- 2 large eggs + 1 egg white
- 2 tsp. pure vanilla extract
- store bought whipped cream
