Ingredients

• CRUST:
• 45 vanilla wafers, crushed (1-1/2 cups)
• 3 tablespoons sugar
• 6 tablespoons butter, melted
• CHEESECAKE FILLING:
• 3 packages (8 ounces) cream cheese, softened
• 1/2 cup freeze-dried strawberries
• 1-1/2 cups confectioners' sugar
• 1 tablespoon cornstarch
• 1 tablespoon lemon juice
• 1/2 teaspoon vanilla extract
• 1/2 cup heavy whipping cream
• CRUNCH TOPPING:
• 30 vanilla wafers, crushed (1 cup)
• 1/2 cup freeze-dried strawberries, crushed
• 1/4 cup butter, melted
• Whipped cream and sliced fresh strawberries, optional
