Ingredients
- 3 large LeaderBrand Courgettes , thinly sliced
- ½ bag LeaderBrand Wild Rocket
- 300g pappardelle, tagliatelle, or pasta of choice
- 2 cloves garlic, thinly sliced
- Pinch of chili flakes
- Olive oil, for cooking
- 300ml cream
- 1 cup frozen peas, cooked
- Zest of 1 lemon
- 2tbsp freshly torn basil leaves
- 2 tbsp toasted pine nuts
- 50g Parmesan cheese, grated
- Salt & pepper, to taste
- Extra Parmesan, for garnish
